  1. Preheat oven to 350F
  2. Make flax egg by mixing 1 tbsp ground flax seed with 3 tbsp water and allowing it to sit for 15 minutes.
  3. Line baking sheet with parchment paper.
  4. While flax egg is setting up, combine almond flour, coconut flour, cacao powder, baking soda, and salt. Mix until evenly combined.
  5. Once flax egg is set up, in a separate dish, combine flax egg, sunbutter, honey, vanilla extract, almond milk, and coconut oil. Mix until well combined.
  6. Slowly mix dry ingredients into wet ingredients, doing about a quarter at a time. Mix until everything is combined.
  7. Using a tablespoon, make golf ball-sized balls of dough. Then use your thumb or fingers to create a crater in the middle of the cookie.
  8. Bake cookies in the oven for 6-8 minutes.
  9. Remove cookies from oven and put mini chocolate chips in the cookies’ craters.
  10. Turn oven off and put cookies back in the oven for about 10 minutes, or until chocolate chips are slightly melted.
  11. Remove from oven again, and place cookies on cooling rack.
  12. Enjoy at room temperature.
