Another week of summer has come and gone and I’m still hesitant to turn on the oven! Finally not in triple digits, but lord knows it’ll go up again soon. I’ve really been wanting cookies lately. Bad. I’m such a sucker for a good cookie! Especially anything with chocolate chips. I mean, it just doesn’t get much better than a good, sweet chocolate chip cookie. Or one of my Loaded Zucchini Cookies! But lately it’s just been way too hot to turn the oven on for Loaded Zucchini Cookies. So, it was time to get a little creative. How can I make healthy, sweet, delicious chocolate chip cookies? No-Bake Chocolate Chip Power Cookies

I’m calling these little tasty treats “Power Cookies” for good reason! They’re filling and are perfect for a quick energy boost. With a base of medjool dates and almond flour, they aren’t low-carb, but that’s definitely not a bad thing. These carbs are what keep you moving and give you short-term energy! The dates and almond flour make these No-Bake Chocolate Chip Power cookies the perfect delicious pre-workout snack! No-Bake Chocolate Chip Power Cookies

I threw some flaxseed, chia seeds, and coconut in this recipe to pack in some extra nutrients. Flax is a great source of omega-3 fatty acids, which is the anti-inflammatory fatty acid. And being a chronic illness fighter, I’m all about anti-inflammatory foods! They’re also a good source of fiber (as are the dates and almond flour), which helps keep things moving, if you know what I mean. Another great source of fiber? Chia seeds! I love using chia seeds in sweet recipes because they add fiber, plant-based protein, and even a little crunch. They truly are a superfood. Shredded coconut is one of my favorite foods. With no added sugar, but loads of good flavor, they give these No-Bake Chocolate Chip Power Cookies a great taste and some extra healthy fats. No-Bake Chocolate Chip Power Cookies

I’m not going to lie to you. My favorite part of this recipe is the chocolate chips. All the other stuff is great too, obviously, but chocolate is kind of my favorite thing. And the Enjoy Life Semi-Sweet Mini Chocolate Chips I used (find them here) pair perfectly with these date-based cookies. Plus, they wouldn’t be chocolate chip cookies without the chocolate chips!

No-Bake Chocolate Chip Power Cookies Recipe
Prep Time 10 minutes
Prep Time 10 minutes
  1. Line baking sheet with parchment paper.
  2. Add all ingredients except chocolate chips to a food processor.
  3. Pulse until fully combined.
  4. Remove blade and fold/press in chocolate chips.
  5. Press and shape dough into cookies and place on parchment paper-lined baking sheet.
  6. Put cookies in refrigerator for about 15 minutes to set.
  7. Enjoy chilled or at room temperature! Store in refrigerator.

    1. Honestly, if you’re not into chia, you can definitely just leave them out! Or you could play around with hemp seeds, though I haven’t try those in these cookies yet! I’m glad you’re excited about them too!

    1. haha well there are different kinds of “no-bake” cookies! The traditional ones have oats, chocolate, pb, and a ton of (i believe) powdered sugar to harden them up. My no-bake cookies are kind of more like powerbars!

  9. They look yummy…must give it a go one day, but maybe with something other than dates as I’m not too keen on those. Do you think it’ll work with dried cranberries?

    1. I unfortunately can’t have cranberries so I’m not sure. I use the dates for texture and sweetness, so you might need something a little stickier and could possibly add some maple syrup, but no promises! If you try, please let me know so I can include it in the recipe notes!
