Instructions
  1. Combine dry ingredients in a large bowl.
  2. Add egg, almond milk, and coconut oil to dry ingredients.
  3. Mix until fully combined.
  4. Grease skillet or non-stick pan with coconut oil.
  5. With an ice cream scoop, scoop pancake batter onto skillet to form pancakes that are approximately 4″-5″ in diameter.
  6. Allow to cook on one side until bubbles form in batter (approx. 3-4 minutes), then flip and cook for approximately 2-3 minutes.
  7. Stack on a plate, add toppings of choice, and enjoy!
Recipe Notes

These pancakes go incredibly well with Wild Friend’s Peanut Cashew Superbutter, fresh blueberries, and just a tiny bit of pure maple syrup, but enjoy however you’d like!
