Y’all know I love my chocolate. And I’ve really been wanting to come up with some kind of healthy double chocolate cookie recipe for you guys. But it’s just been so blasted hot that I can’t bring myself to turn on the oven. The air conditioner is already working hard enough as it is, ya know? I just can’t justify adding more heat to the house! But, I still want something double chocolate. And nourishing. And delicious. So, I came up with these Healthy Double Chocolate Fudge Balls! Healthy Double Chocolate Fudge Balls

You might be wondering how anything double chocolate and fudge-y could possible be healthy. Well, I’ll tell you!

For these Healthy Double Chocolate Fudge Balls, I used a base of chickpeas and cashew butter. Just like in my Chocolate Chip Coconut Cookie Dough Bites, using garbanzo beans and cashew butter allows for a super smooth texture. Additionally, these ingredients add protein, fiber, and healthy fats, making these chocolatey bites filling and nutritious!Β Healthy Double Chocolate Fudge Balls

Obviously, cacao powder are what makes these Healthy Double Chocolate Fudge Balls, well, chocolate. Cacao is also an excellent source of antioxidants as well as minerals such as magnesium. Dark chocolate chips add some crunch to this snack while adding even more chocolate and richness.

Playing the sweetener in this recipe are medjool dates! Dates are a wonderful way to add not only substance to balls like these, but sweeten things up without refined sugar. Plus they add fiber, vitamins, and minerals! Something else that adds fiber? Chia seeds. Chia seeds are one of my favorite things to add to recipes because they are filling, packed with omega-3s, protein, and fiber. Just like any baked good, vanilla extract and sea salt are also added to this recipe. This brings out the chocolate flavor and sweetness of these good and wholesome ingredients. Just a little unsweetened almond milk is used to add some additional moisture because the cacao powder can be a bit drying. Instructions
  1. Add all ingredients except chocolate chips and coconut flakes to food processor or high powered blender.
  2. Blend until everything is completely broken down, combined, and smooth. I use the medium-sized attachment from Ninja Kitchen System and use the "Mix/Dough" function.
  3. Take out blades and fold in chocolate chips.
  4. Add shredded coconut to clean bowl.
  5. Using a large spoon, create ping pong ball-sized balls of dough. Roll each ball in shredded coconut, pressing coconut just enough so that it sticks to the ball.
  6. Place balls on parchment paper-lined baking sheet.
  7. Refrigerate for at least 30 minutes to set.
  8. Enjoy cold and store in the refrigerator.

  2. Thank you so much for sharing! I love garbanzo beans, chia seeds, and almond milk. I’m definitely going to have to try these… especially for my babies. I have one that I have to fight with to gain weight. Our biggest issue is any kind of protein. These will really help!!
