Healthy Double Chocolate Fudge Balls
You might be wondering how anything double chocolate and fudge-y could possible be healthy. Well, I’ll tell you!
For these Healthy Double Chocolate Fudge Balls, I used a base of chickpeas and cashew butter. Just like in my Chocolate Chip Coconut Cookie Dough Bites, using garbanzo beans and cashew butter allows for a super smooth texture. Additionally, these ingredients add protein, fiber, and healthy fats, making these chocolatey bites filling and nutritious!
Obviously, cacao powder are what makes these Healthy Double Chocolate Fudge Balls, well, chocolate. Cacao is also an excellent source of antioxidants as well as minerals such as magnesium. Dark chocolate chips add some crunch to this snack while adding even more chocolate and richness.
Playing the sweetener in this recipe are medjool dates! Dates are a wonderful way to add not only substance to balls like these, but sweeten things up without refined sugar. Plus they add fiber, vitamins, and minerals! Something else that adds fiber? Chia seeds. Chia seeds are one of my favorite things to add to recipes because they are filling, packed with omega-3s, protein, and fiber. They really are one of the best super foods out there if you ask me!
Just like any baked good, vanilla extract and sea salt are also added to this recipe. This brings out the chocolate flavor and sweetness of these good and wholesome ingredients. Just a little unsweetened almond milk is used to add some additional moisture because the cacao powder can be a bit drying. If you’re looking for something a little more moist, add a little more almond milk!
