That’s right. I’m back on the dessert train. It’s been way too long since I shared something sweet with you guys. And let me tell you. These Dark Chocolate Goji Coconut Butter Cups are sweet! Y’all know how much I love my chocolate. Like maybe a little too much. Especially dark chocolate. It’s that perfect blend of sweet and bitter. And the darker the better! I literally can’t go a day without it. It’s just too good. That’s why I’m always trying to find new chocolatey treats to make.
I know I’ve made coconut butter cups before (hello Pine Pollen Peppermint Patties), but you can never go wrong with chocolate and coconut. Especially when you’re adding superfoods! The superfood I added to this sweet treat is goji powder, hence the name Dark Chocolate Goji Coconut Butter Cups (makes sense, right?). Goji powder is not only a beautiful pink color and great tasting, but it’s super nutritious too. Specifically, goji powder is a great source of vitamin C, so it’s ideal for boosting your immune system heading into these colder months.
This recipe is a super easy, super simply one to whip up. If you have the five ingredients listed below, muffin liners, and a freezer, you’re all set to go!
