Y’all know how much I love my chocolate. Like maybe a little too much. Especially dark chocolate. It’s that perfect blend of sweet and bitter. And the darker the better! I literally can’t go a day without it. It’s just too good. That’s why I’m always trying to find new chocolatey treats to make. Dark Chocolate Goji Coconut Butter Cups

I know I’ve made coconut butter cups before (hello Pine Pollen Peppermint Patties), but you can never go wrong with chocolate and coconut. Especially when you’re adding superfoods! The superfood I added to this sweet treat is goji powder, hence the name Dark Chocolate Goji Coconut Butter Cups (makes sense, right?). Goji powder is not only a beautiful pink color and great tasting, but it’s super nutritious too. Specifically, goji powder is a great source of vitamin C, so it’s ideal for boosting your immune system heading into these colder months.

This recipe is a super easy, super simply one to whip up. If you have the five ingredients listed below, muffin liners, and a freezer, you’re all set to go! In just a couple (passive) hours, you’ll have a tasty treat that fills you up, satisfies your sweet tooth, and boosts your immune system. You just can’t ask for much more than that! Instructions
  1. Melt together chocolate chips and coconut oil either in the microwave* or in double boiler.
  2. Pour thin layer of melted chocolate into muffin liners, enough to cover the bottom.
  3. Mix goji powder and honey into melted coconut butter. If the mixture develops too much of a paste-like texture, add in melted coconut oil 1 tsp at a time until desired texture is achieved.
  4. Put layer of coconut butter mixture on top of the chocolate layer and smooth if desired.
  5. Cover coconut butter layer with another layer of chocolate.
  6. Freeze for at least 20 minutes, or until set.
  7. Store in freezer and enjoy cold.
